Sandwiches, Ingredients and Preparation
Sandwiches are two or more slices of bread or a split roll having a sweet or savory filling in between. It's a food typically consisting of vegetables, sliced cheese or meat, placed on or between slices of bread, or more generally any dish wherein bread serves as a container or wrapper for another food type. As well as being homemade, sandwiches are also widely sold in restaurants and can be served hot or cold.
Variety of sandwiches may be made of hot toast fresh bread. Cake can also be used. e.g Victoria sandwich, sponge sandwich. Sandwiches are one of the varied types of the food produced. They can be quite substantial approximately a meal or light food.
Sandwiches Ingredients
Bread: Any kind of bread may be used. E.g brown or whole meal bread, white or rye bread. Whole meal flour or bread are used for heavy types of sandwiches while white bread (nut, orange, raisin date) and roll oat are used for plain tea sandwiches. The bread for sandwiches must be made into sandwiches loaf and not less than 24hours old (rust must be removed) before slicing, if necessary, slice should be 1/8inch or 1/4inch, and depending on the type of sandwich.
Butter: High quality butter is important for good flavour. It Should be soft and pliable. It may be creamed in a bowl to make spreading easy. Well flavoured margarine may be used in place of butter. Butter helps to prevent the filling from soaking into the Bread and adds of flavour minced cucumber, spices, onion, etc. may be added to give variety in flavour.
Filling: There are so many types of filling of sandwiches and they include chipped or sliced meat, vegetables, nuts, fish or fruits etc. These ingredients can be used singly or combine and mix in a dressing mayonnaise. Sliced ingredients must be thin and even.
Garnishes: The garnishes to be used depends on the types of sandwich they include lettuce, water cross, parsley and other salad, green olives, pimento, green pepper etc.
Preparation of Sandwiches
- Half filling, garnish and butter prepare.
- Allow plenty of work space.
- Arrange the slices of bread in rolls.
- Spread all, (spread even) with butter before adding filling.
- Do not pick up bread to spread.
- Spread equally quantity of filling even on the bread.
- Cover up each slice of bread with a corresponding slice.
- Stack several made sandwich and cut with one stock of knife.
- Arrange on a tray and cover with wet cloth, wax paper or foil to prevent drying.
- Different shades and sizes can be cut to make it attractive; round, square, triangle, etc.
